Ever wondered why your cake sank in the middle? Or why you seem to have followed every single step of a recipe and the results were, well, a little disappointing?

 

Hi, I’m Melisa, the kitchen scientist and I’m on a mission to uncover the perfect formula that will allow anyone to bake almost anything perfectly. We’ve often heard the saying that 'baking is a science', and I am here to prove it. 

 

In my new series, #relyingonscience, I will be unlocking the everyday science you need to know to master your baking. We’ll be delving into the fascinating world of physics, chemistry and biology to explain the why, behind the “how” in baking because it’s not just about following a recipe!

 

I truly believe that:

  • when you know why, you definitely can fix it

  • When you know why, you can probably change it, and

  • when you know why, maybe, just maybe, you can innovate it.

 

You might remember me from the 2024 season of the Great Australian Bake off where I came first in 2 technical challenges and won star baker. You might say, oh she is just talented or maybe she got lucky. No, darling, I was relying on science and so can you.
